Description

Delightful French Butter Cookies, also known as ‘Sablés,’ are buttery and sweet treats that melt in your mouth. Perfectly crisp outside and tender inside, they are versatile and can be customized with various add-ins.


Ingredients

  • 1 cup unsalted butter, softened (226 g)
  • 3/4 cup granulated sugar (150 g)
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 large egg yolks
  • 2 cups all-purpose flour (250 g)
  • 1/2 cup powdered sugar for dusting (60 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar on medium speed until light and fluffy, about 3-5 minutes.
  3. Add the salt and vanilla extract, mixing until incorporated.
  4. Mix in the egg yolks, one at a time, ensuring well combined after each.
  5. Gradually sift in the all-purpose flour, mixing on low until there are no visible flour streaks.
  6. Gather the dough into a ball, flatten it into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.
  7. Roll the chilled dough out to 1/4 inch thick on a floured surface.
  8. Cut out desired shapes with cookie cutters and place them on the prepared baking sheets.
  9. Bake for 10-12 minutes, until edges are lightly golden. Avoid overbaking.
  10. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  11. Dust with powdered sugar before serving.
