- 2 tablespoons vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion turns translucent, about 2-3 minutes.
- Stir in the mixed vegetables, cooking until tender.
- Push the vegetables to one side of the skillet, and pour the beaten eggs into the empty side, scrambling until cooked.
- Add the prepared rice, mixing everything together well.
- Pour in the soy sauce and sesame oil, stirring to combine.
- Season with salt and pepper to taste.
- Garnish with sliced green onions and serve hot.
Notes
Use day-old rice for the best texture. Customize with different vegetables or proteins as desired.
