Description

A delightful fried rice dish packed with flavors, perfect for using up leftover rice and enjoying your veggies.


Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion turns translucent, about 2-3 minutes.
  3. Stir in the mixed vegetables, cooking until tender.
  4. Push the vegetables to one side of the skillet, and pour the beaten eggs into the empty side, scrambling until cooked.
  5. Add the prepared rice, mixing everything together well.
  6. Pour in the soy sauce and sesame oil, stirring to combine.
  7. Season with salt and pepper to taste.
  8. Garnish with sliced green onions and serve hot.

Notes

Use day-old rice for the best texture. Customize with different vegetables or proteins as desired.
