Instructions
- In a saucepan, combine granulated sugar, corn syrup, and water. Cook over medium heat, stirring until dissolved.
- Once the mixture boils, stop stirring and let it cook until it reaches the soft-ball stage (235°F to 240°F).
- While the sugar mixture is cooking, beat the egg whites in a large bowl until they form stiff peaks.
- Slowly pour the hot sugar mixture into the egg whites while continuously beating.
- Add vanilla extract and continue beating until the mixture holds its shape.
- Fold in any nuts if using.
- Drop spoonfuls of the mixture onto wax paper and let cool until set.
