- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and cubed
- 1/4 teaspoon salt
- 3–4 tablespoons ice water
- 1 pound fresh Florida shrimp, peeled and deveined
- 1 cup sharp cheddar cheese, shredded
- 1 cup heavy cream
- 3 large eggs
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon black pepper
- 1/4 cup green onions, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the flour and salt for the crust. Cut in the butter using a pastry cutter or your fingers until the mixture looks like coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic, and place in the refrigerator for 30 minutes.
- Roll out the chilled dough on a floured surface to fit a 9-inch pie pan. Place the rolled crust in the pan and trim the edges.
- In a skillet over medium heat, sauté the shrimp until they turn pink, about 3-4 minutes. Remove from heat and let them cool.
- In a bowl, whisk together the heavy cream, eggs, Old Bay seasoning, and black pepper until smooth.
- Spread the sautéed shrimp and green onions evenly over the pie crust. Pour the cream mixture over the shrimp. Finally, sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown. Allow to cool for 10 minutes before serving.
