- 1 lb shrimp, peeled and deveined
- 2 cups cooked fluffy rice
- 1 cup fire roasted corn
- 1 cup cherry tomatoes, halved
- Fresh herbs (cilantro, parsley, etc.)
- Juice of 2 limes
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Creamy cilantro sauce (store-bought or homemade)
Instructions
- Prepare the shrimp by mixing it with olive oil, lime juice, chili powder, garlic powder, salt, and pepper in a bowl.
- Cook the shrimp in a skillet over medium heat for 2-3 minutes on each side until pink and cooked through.
- Assemble the bowls by placing a serving of rice at the bottom of each bowl.
- Add the cooked shrimp, fire roasted corn, halved cherry tomatoes, and fresh herbs on top of the rice.
- Finish by drizzling with creamy cilantro sauce and serve immediately.
Notes
Customize by adding more vegetables or swapping out shrimp for chicken or tofu. Serve with tortilla chips, guacamole, or a side salad.
