Description

Colorful and delicious Fiesta Lime Shrimp Bowls that are quick to prepare and bursting with flavor. Perfect for any occasion!


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked fluffy rice
  • 1 cup fire roasted corn
  • 1 cup cherry tomatoes, halved
  • Fresh herbs (cilantro, parsley, etc.)
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Creamy cilantro sauce (store-bought or homemade)

Instructions

  1. Prepare the shrimp by mixing it with olive oil, lime juice, chili powder, garlic powder, salt, and pepper in a bowl.
  2. Cook the shrimp in a skillet over medium heat for 2-3 minutes on each side until pink and cooked through.
  3. Assemble the bowls by placing a serving of rice at the bottom of each bowl.
  4. Add the cooked shrimp, fire roasted corn, halved cherry tomatoes, and fresh herbs on top of the rice.
  5. Finish by drizzling with creamy cilantro sauce and serve immediately.

Notes

Customize by adding more vegetables or swapping out shrimp for chicken or tofu. Serve with tortilla chips, guacamole, or a side salad.
