Description

Delicious and refreshing feta skewers with cucumber, perfect for parties or light lunches.


Ingredients

Scale
  • 200 grams of feta cheese
  • 1 large cucumber
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 10 cherry tomatoes
  • 10 wooden skewers (about 20 cm long)
  • 2 tablespoons of olive oil
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Cut the feta cheese into bite-sized cubes, about 2 cm in size.
  2. Wash and slice the cucumber into rounds about 1 cm thick.
  3. Wash and chop the red and yellow bell peppers into bite-sized pieces, roughly 2 cm in size.
  4. Rinse the cherry tomatoes under cold water and leave them whole.
  5. Soak wooden skewers in water for about 10 minutes to prevent burning.
  6. Assemble the skewers by alternating ingredients: feta cheese, cucumber, bell pepper pieces, and cherry tomatoes.
  7. Mix olive oil, lemon juice, oregano, salt, and pepper in a bowl for dressing.
  8. Brush or serve the dressing on the side with skewers.
  9. Grill skewers for 2-3 minutes on each side or serve cold.
