  • 1 tsp peppermint extract
  • 23 tbsp heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Gradually add the flour mixture and milk to the batter, mixing until just combined.
  6. Divide the batter into two equal parts and tint one half with red food coloring.
  7. Alternate spooning red and white batter into the cupcake liners for a marbled effect.
  8. Bake for 18-20 minutes, checking with a toothpick for doneness.
  9. Cool the cupcakes in the pan for a few minutes and then transfer to a wire rack to cool completely.
  10. For the frosting, beat the softened butter until creamy, then gradually mix in the powdered sugar, peppermint extract, and heavy cream.
  11. Frost the cooled cupcakes and enjoy!
