- 2–3 tbsp heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a bowl, whisk together the all-purpose flour, baking powder, and salt.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- Gradually add the flour mixture and milk to the batter, mixing until just combined.
- Divide the batter into two equal parts and tint one half with red food coloring.
- Alternate spooning red and white batter into the cupcake liners for a marbled effect.
- Bake for 18-20 minutes, checking with a toothpick for doneness.
- Cool the cupcakes in the pan for a few minutes and then transfer to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually mix in the powdered sugar, peppermint extract, and heavy cream.
- Frost the cooled cupcakes and enjoy!
