A vibrant salad featuring mixed greens, colorful vegetables, and a tangy citrus dressing, perfect for holiday gatherings.


Ingredients

  • 4 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, yellow, and orange), diced
  • 1 small red onion, thinly sliced
  • 1/2 cup pomegranate seeds
  • 1/2 cup roasted walnuts or pecans, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Zest of 1 orange (optional)

Instructions

  1. Rinse the mixed salad greens under cold water and spin dry or pat dry with a paper towel. Place them in a large salad bowl.
  2. Add the halved cherry tomatoes, diced cucumber, and diced bell peppers to the bowl of salad greens.
  3. Thinly slice the red onion and add it to the salad mixture.
  4. Sprinkle the pomegranate seeds over the top of the salad.
  5. In a small pan, lightly toast the walnuts or pecans over medium heat for 4-5 minutes, stirring frequently. Remove from heat and allow to cool slightly before chopping coarsely and adding to the salad.
  6. Crumble the feta cheese and scatter it on top of the salad along with the chopped fresh parsley.
  7. In a small bowl, whisk together fresh orange juice, lemon juice, honey (or maple syrup), and olive oil. Season with salt, pepper, and optional orange zest to taste.
  8. Just before serving, drizzle the tangy citrus dressing over the salad and gently toss to combine.
  9. Serve immediately and enjoy.

Notes

For best results, store the dressing separately until serving to keep the greens crisp.
