- 1 cup whipped cream
- 1/4 cup extra festive sprinkles
Instructions
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the buttermilk, eggs, melted butter, and vanilla extract. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients. Use a spatula or wooden spoon to gently mix them together, being careful not to overmix; some lumps are okay.
- Gently fold in the festive holiday sprinkles until evenly distributed in the batter.
- Heat a non-stick skillet or griddle over medium heat, lightly greasing as necessary.
- Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip carefully and cook for another 1-2 minutes, or until golden brown.
- Stack the pancakes on plates, top with whipped cream, and sprinkle extra festive sprinkles on top. Enjoy immediately!
