Instructions
- Preheat your oven to 400°F and set a wire rack on a baking sheet, brushing it lightly with oil to prevent sticking.
- Set up your breading stations: place flour in one dish, whisk eggs in another, and mix breadcrumbs, Parmesan cheese, and lemon zest in the third.
- Slice each chicken breast in half lengthwise and pound them to an even thickness of about ÂĽ inch, then season with salt and pepper.
- Dredge each cutlet in flour, dip in the beaten eggs, and coat with the breadcrumb mixture, ensuring they are well-coated.
- Place the breaded cutlets on the wire rack and lightly spray the tops with oil.
- Bake for 15–20 minutes, or until the internal temperature reaches 165°F.
