Instructions

  1. Preheat your oven to 400°F and set a wire rack on a baking sheet, brushing it lightly with oil to prevent sticking.
  2. Set up your breading stations: place flour in one dish, whisk eggs in another, and mix breadcrumbs, Parmesan cheese, and lemon zest in the third.
  3. Slice each chicken breast in half lengthwise and pound them to an even thickness of about ÂĽ inch, then season with salt and pepper.
  4. Dredge each cutlet in flour, dip in the beaten eggs, and coat with the breadcrumb mixture, ensuring they are well-coated.
