Description

A delicious one-pot meal that combines fajita flavors with pasta, perfect for family dinners or entertaining friends.


Ingredients

  • 12 oz. fettuccine or penne pasta
  • 1 lb. chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Once hot, add sliced onions and bell peppers, sauté until softened, about 5 minutes.
  3. Push vegetables to one side of the skillet and add sliced chicken breast, seasoning with chili powder, cumin, garlic powder, salt, and pepper. Cook until chicken is no longer pink, about 7-10 minutes.
  4. Mix vegetables and chicken, then pour in chicken broth and heavy cream. Stir until combined and let simmer for about 5 minutes.
  5. Add cooked pasta to the skillet, mixing everything until pasta is well-coated with sauce.
  6. Sprinkle shredded cheese over the pasta mixture, stirring until cheese melts and everything is combined.
  7. Serve hot, garnished with cilantro and lime wedges.

Notes

For a vegetarian version, substitute chicken with black beans or tofu. You can also use shrimp for a seafood twist.
