- 1 pound salted butter
- 3 large yellow onions, cut into large slices
- 2 tablespoons chopped garlic
- 1/4 cup dried Italian seasoning
- 2 bay leaves
- 8 1/2 cups beef broth
- 2 fresh thyme sprigs, leaves only
- Salt and pepper to taste
- Four 8-ounce burger patties
- 4 brioche buns
- 8 slices Gruyère cheese
- Paprika for sprinkling
Instructions
- In a large pot, melt the butter over medium-high heat, then add the onions, garlic, Italian seasoning, and bay leaves. Cook for 20-25 minutes until softened and caramelized.
- Pour in the beef broth and add thyme leaves. Bring to a low boil, then reduce heat and simmer for 20 minutes.
- Season the soup with salt and pepper. Allow to cool, then refrigerate overnight for best flavor.
- The next day, reheat the soup on low for 8-10 minutes, skimming off any solids if necessary.
- Preheat a grill pan or outdoor grill, and grill the burger patties to your desired doneness.
- Assemble the burgers by placing the bottom half of a brioche bun in an oven-safe bowl. Add a burger patty, top with a scoop of warm French onion soup, more sautéed onions, and pour broth around the bun.
- Add 2 slices of Gruyère cheese on top, sprinkle with paprika.
- Broil until the cheese is bubbly and golden brown.
- Top with the brioche bun and serve immediately with utensils for your guests.
Notes
