Delicious sandwich cookies combining the soft, chewy texture of snickerdoodles with creamy, spiced eggnog frosting, perfect for holiday gatherings.


Ingredients

  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt
  • 3 tablespoons cinnamon sugar (for rolling)
  • 1/2 cup (1 stick) unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar
  • 23 tablespoons eggnog (or more as needed)
  • 1/8 teaspoon ground nutmeg
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the flour, cream of tartar, baking soda, and salt; mix until cohesive.
  5. Roll rounded tablespoons of dough into balls and coat with cinnamon sugar.
  6. Place dough balls on baking sheets, spacing them about 2 inches apart.
  7. Bake for 9-11 minutes or until edges are golden brown.
  8. Cool cookies on sheets for a few minutes before transferring to a wire rack.
  9. For frosting, beat the softened butter until creamy, then gradually add powdered sugar and ground nutmeg.
  10. Mix in eggnog until smooth, adding more as needed, and add a pinch of salt.
  11. Assemble sandwich cookies by spreading frosting on one cookie and topping with another.
  12. Chill the assembled cookies in the refrigerator for at least 10 minutes to set the frosting.

Notes

Store cookies in an airtight container at room temperature, or refrigerate if frosted for up to a week. Unfilled cookies can be frozen for up to three months.
