- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1/2 cup eggnog
- 1 cup powdered sugar (for filling)
- 1–2 tablespoons eggnog (for mixing into the powdered sugar)
- Additional ground nutmeg (for sprinkling on top)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
- In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, molasses, and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing just until incorporated.
- Stir in the eggnog until the dough is smooth. It should be slightly sticky.
- Scoop out about 1 tablespoon of dough and roll it into a ball. Place the dough balls on the prepared baking sheet, leaving about 2 inches between each ball.
- Using your thumb or the back of a spoon, make an indentation in the center of each dough ball.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the filling by mixing powdered sugar with 1-2 tablespoons of eggnog to achieve a spreadable consistency.
- Once the cookies are completely cooled, fill each thumbprint with the eggnog frosting and sprinkle with additional ground nutmeg if desired.
Notes
For best results, use room temperature ingredients and ensure not to overmix the dough.
