Ingredients

  • 2 large eggs
  • 3/4 cup sour cream
  • 1/4 cup butter, melted
  • 1 1/2 cups cheddar cheese, shredded
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Shred the zucchini and squeeze out excess moisture using a kitchen towel.
  2. In a medium bowl, whisk together eggs, sour cream, and melted butter.
  3. In a separate large bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Make a well in the dry ingredients, pour in the wet mixture, and gently fold until just combined.
  5. Fold in zucchini, green onion, and cheddar cheese until evenly mixed.
  6. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  7. Pour batter evenly into the prepared loaf pan.
  8. Bake for 50-60 minutes, checking for doneness with a toothpick.
  9. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
