- 1 1/2 cups zucchini, shredded
- 1/4 cup green onion, sliced
- 2 large eggs
- 3/4 cup sour cream
- 1/4 cup butter, melted
- 1 1/2 cups cheddar cheese, shredded
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Shred the zucchini and squeeze out excess moisture using a kitchen towel.
- In a medium bowl, whisk together eggs, sour cream, and melted butter.
- In a separate large bowl, whisk together flour, baking powder, baking soda, and salt.
- Make a well in the dry ingredients, pour in the wet mixture, and gently fold until just combined.
- Fold in zucchini, green onion, and cheddar cheese until evenly mixed.
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Pour batter evenly into the prepared loaf pan.
- Bake for 50-60 minutes, checking for doneness with a toothpick.
- Allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
