Description

Delightful cookie cups filled with creamy peanut butter cups, perfect for celebrating love on Valentine’s Day.


Ingredients

Scale
  • 6 tablespoons Unsalted Butter, softened to room temperature
  • 0.5 cup Creamy Peanut Butter
  • 0.5 cup Brown Sugar
  • 0.5 cup Granulated Sugar
  • 0.5 teaspoon Vanilla Extract
  • 1 Large Egg
  • 0.75 teaspoon Baking Soda
  • 1.25 cups All-Purpose Flour
  • 30 Miniature Reese’s Peanut Butter Cups
  • Jumbo Heart Sprinkles, to preference

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it with butter or cooking spray.
  3. Mix the Unsalted Butter, Creamy Peanut Butter, Brown Sugar, and Granulated Sugar until creamy and smooth.
  4. Add the Vanilla Extract and Large Egg, blending until well combined.
  5. Combine the Baking Soda and All-Purpose Flour in another bowl, then gradually stir into the wet mixture.
  6. Scoop the dough into the muffin tin, filling each cup halfway.
  7. Add a Miniature Reese’s Peanut Butter Cup into each scoop of dough.
  8. Bake for about 10-12 minutes, until the tops are golden brown.
  9. Cool the cookie cups in the tin for 5 minutes before transferring to a wire rack.
  10. Decorate with Jumbo Heart Sprinkles once cooled.

Notes

Store in an airtight container at room temperature for 3-5 days; they can also be frozen for longer storage.
