Description

Ingredients

  • 2 cups Rice (white, brown, or cilantro lime)
  • 1 lb Protein (ground beef, chicken, turkey, or beans)
  • 1 tbsp Taco seasoning
  • 1 cup Bell pepper, chopped
  • 1 small Onion, chopped
  • 1 cup Corn, canned or fresh
  • 1 cup Tomatoes, diced
  • 1 cup Shredded lettuce
  • 1 medium Avocado, sliced
  • 1/2 cup Cheese (cheddar, Monterey Jack, or cotija)
  • 2 each Lime wedges
  • 1/2 cup Greek yogurt
  • 1 tbsp Lime juice
  • 1 tsp Garlic powder
  • pinch Salt

Instructions

  1. Cook the Rice: Start by cooking your choice of rice according to the package instructions.
  2. Cook the Protein: In a large skillet over medium heat, add the protein of your choice. If using ground beef or turkey, break it apart and sauté until fully cooked.
  3. Add Seasoning: Sprinkle the taco seasoning over the cooked protein. Mix well and let cook for an additional 2-3 minutes.
  4. Add Vegetables: Toss in the chopped onion and bell pepper. Cook until the vegetables are tender, about 5 minutes, then stir in the corn and cook for another minute.
  5. Prepare Vegetables: Dice the tomatoes, slice the avocado, and shred the lettuce.
  6. Build the Bowl: In a serving bowl, start with a layer of rice. Top it with the protein and vegetable mixture.
  7. Add Toppings: Add the diced tomatoes, shredded lettuce, and avocado slices. Finish with a sprinkle of cheese.
  8. Add Sauce: In a small bowl, mix the Greek yogurt, lime juice, garlic powder, and a pinch of salt. Drizzle over the taco rice bowl.
  9. Serve: Serve with lime wedges on the side for extra flavor!
