Ingredients

- 2 cups Rice (white, brown, or cilantro lime)
- 1 lb Protein (ground beef, chicken, turkey, or beans)
- 1 tbsp Taco seasoning
- 1 cup Bell pepper, chopped
- 1 small Onion, chopped
- 1 cup Corn, canned or fresh
- 1 cup Tomatoes, diced
- 1 cup Shredded lettuce
- 1 medium Avocado, sliced
- 1/2 cup Cheese (cheddar, Monterey Jack, or cotija)
- 2 each Lime wedges
- 1/2 cup Greek yogurt
- 1 tbsp Lime juice
- 1 tsp Garlic powder
- pinch Salt
Instructions
- Cook the Rice: Start by cooking your choice of rice according to the package instructions.
- Cook the Protein: In a large skillet over medium heat, add the protein of your choice. If using ground beef or turkey, break it apart and sauté until fully cooked.
- Add Seasoning: Sprinkle the taco seasoning over the cooked protein. Mix well and let cook for an additional 2-3 minutes.
- Add Vegetables: Toss in the chopped onion and bell pepper. Cook until the vegetables are tender, about 5 minutes, then stir in the corn and cook for another minute.
- Prepare Vegetables: Dice the tomatoes, slice the avocado, and shred the lettuce.
- Build the Bowl: In a serving bowl, start with a layer of rice. Top it with the protein and vegetable mixture.
- Add Toppings: Add the diced tomatoes, shredded lettuce, and avocado slices. Finish with a sprinkle of cheese.
- Add Sauce: In a small bowl, mix the Greek yogurt, lime juice, garlic powder, and a pinch of salt. Drizzle over the taco rice bowl.
- Serve: Serve with lime wedges on the side for extra flavor!
