- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 2 cups elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can diced tomatoes (14.5 oz)
- ½ cup sour cream
- ¼ cup chopped green onions
- 1 tablespoon olive oil
- ½ cup milk
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain any excess fat.
- Stir in the taco seasoning and water, allowing to simmer for about 5 minutes.
- In a separate pot, boil salted water and cook the elbow macaroni until tender, about 8-10 minutes. Drain and set aside.
- Heat olive oil in the original pot, add diced tomatoes, and warm gently.
- Add the drained macaroni and seasoned beef to the pot, mixing everything together.
- Pour in the milk and gradually stir in the shredded cheddar and mozzarella cheeses until melted and creamy.
- Remove from heat, fold in the sour cream, and garnish with chopped green onions before serving.
