Description

A delightful dish that combines the flavors of tacos with the comfort of macaroni and cheese, perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can diced tomatoes (14.5 oz)
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • 1 tablespoon olive oil
  • ½ cup milk

Instructions

  1. Brown the ground beef in a skillet over medium-high heat. Drain any excess fat.
  2. Stir in the taco seasoning and water, allowing to simmer for about 5 minutes.
  3. In a separate pot, boil salted water and cook the elbow macaroni until tender, about 8-10 minutes. Drain and set aside.
  4. Heat olive oil in the original pot, add diced tomatoes, and warm gently.
  5. Add the drained macaroni and seasoned beef to the pot, mixing everything together.
  6. Pour in the milk and gradually stir in the shredded cheddar and mozzarella cheeses until melted and creamy.
  7. Remove from heat, fold in the sour cream, and garnish with chopped green onions before serving.

Notes
