Instructions
- Prepare the Base: Blend together the cottage cheese, olive oil, and egg until mostly smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Combine: Gently mix the dry ingredients into the wet ingredients until just combined.
- Add Filling: Fold in the chopped spinach and shredded mozzarella cheese.
- Shape Bagels: Divide the dough into six portions, flatten each, and create a small hole in the middle.
- Bake: Preheat your oven to 400°F (200°C). Bake the formed bagels for about 15 minutes until lightly golden.
- Cool: Let the bagels cool on a wire rack for a few minutes before serving.
