Description

A simple, tasty slow cooker recipe for sweet and sour pork that requires minimal effort and results in a comforting dish served over rice.


Ingredients

Scale
  • 2 lbs pork tenderloin
  • 1 cup pineapple chunks
  • 1/2 cup vinegar
  • 1/2 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup bell peppers, sliced (assorted colors)
  • 1/4 cup brown sugar (optional)
  • Salt and pepper to taste
  • Jasmine rice for serving

Instructions

  1. Place the pork tenderloin in the slow cooker.
  2. In a bowl, mix together pineapple, vinegar, soy sauce, garlic, ginger, and brown sugar. Pour the mixture over the pork.
  3. Add the sliced bell peppers to the slow cooker.
  4. Cover and cook on low for 6-8 hours or until the pork is fork-tender.
  5. Once done, shred the pork with two forks and mix it into the sauce.
  6. Serve the sweet and sour pork over warm jasmine rice.

Notes

Trim excess fat from the pork before cooking. For a thicker sauce, thicken with a cornstarch slurry after shredding the pork.
