A simple, tasty slow cooker recipe for sweet and sour pork that requires minimal effort and results in a comforting dish served over rice.

- 2 lbs pork tenderloin
- 1 cup pineapple chunks
- 1/2 cup vinegar
- 1/2 cup soy sauce
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1 cup bell peppers, sliced (assorted colors)
- 1/4 cup brown sugar (optional)
- Salt and pepper to taste
- Jasmine rice for serving
Instructions
- Place the pork tenderloin in the slow cooker.
- In a bowl, mix together pineapple, vinegar, soy sauce, garlic, ginger, and brown sugar. Pour the mixture over the pork.
- Add the sliced bell peppers to the slow cooker.
- Cover and cook on low for 6-8 hours or until the pork is fork-tender.
- Once done, shred the pork with two forks and mix it into the sauce.
- Serve the sweet and sour pork over warm jasmine rice.
Notes
Trim excess fat from the pork before cooking. For a thicker sauce, thicken with a cornstarch slurry after shredding the pork.
