- 1 pound Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 package (9 oz) cheese tortellini
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Pour in the chicken broth and bring to a boil.
- Add the cheese tortellini and cook according to package instructions.
- Stir in the spinach and cream, and season with salt and pepper.
- Simmer for a few more minutes until the spinach is wilted.
- Serve hot with grated Parmesan cheese on top and alongside crusty homemade bread.
Notes
For a thicker soup, mix a tablespoon of cornstarch with cold water and add while simmering.
