Description

A delightful and simple chia pudding packed with raspberry flavor, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or milk of choice)
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen raspberries (plus more for topping)
  • Sliced almonds or chopped nuts
  • Shredded coconut
  • Extra drizzle of maple syrup

Instructions

  1. Combine 1/4 cup of chia seeds with 1 cup of unsweetened almond milk in a medium-sized mixing bowl. Stir well and set aside for about 5 minutes.
  2. Stir the mixture again; the chia seeds should start to thicken the almond milk. Let it sit longer if too thin.
  3. Add 2 tablespoons of pure maple syrup and 1/2 teaspoon of vanilla extract. Mix until fully blended and smooth.
  4. Fold in 1/2 cup of fresh or frozen raspberries, being careful not to overmix.
  5. Divide the pudding into two serving cups or bowls, cover, and refrigerate for at least 2 hours or overnight.
  6. Remove from the fridge, stir, and top with additional raspberries, nuts, coconut, and maple syrup before serving. Enjoy!
