- 2 tablespoons unsalted butter
- 1 can diced green chilies
- 1 can evaporated milk
- ½ teaspoon kosher salt
- ¼ teaspoon ground cumin

Instructions
- Coat the Cheese: Toss the grated cheddar with cornstarch until evenly coated.
- Cook the Aromatics: Melt butter in a saucepan over medium heat. Add onion and cook until soft, then add garlic and cook briefly.
- Add Tomatoes and Chilies: Stir in half the tomatoes and the green chilies. Cook until some liquid reduces.
- Add Evaporated Milk: Pour in evaporated milk and bring to a gentle simmer.
- Season the Base: Stir in salt, cumin, and black pepper.
- Melt the Cheese Slowly: Add cheese in small handfuls, stirring constantly until melted.
- Adjust Consistency: Add warm milk if too thick or simmer briefly if too thin.
- Transfer and Garnish: Pour into a serving bowl and top with remaining tomatoes, cilantro, and jalapeño.
- Serve Warm: Serve immediately with tortilla chips.
