Scale
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  2. Cream together the butter and sugar until light and fluffy.
  3. Add the pumpkin puree and egg, mixing until well blended.

  5. Gradually stir the dry ingredients into the wet mixture until fully combined.
  6. Roll the dough into small balls and coat them in a mix of sugar and cinnamon.
  7. Place the balls on a baking sheet lined with parchment paper, giving space to spread.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Drizzle with caramel sauce if desired.
  10. Let cool slightly before serving.

Notes

For best results, let dough chill for 30 minutes before rolling. Store in an airtight container at room temperature for up to a week.
