Description

A comforting and easy-to-prepare casserole featuring layers of potato and cheese pierogies, smoked kielbasa, creamy mushroom sauce, and melted cheddar cheese.


Ingredients

  • 24 oz frozen potato and cheese pierogies
  • 1 lb smoked kielbasa, sliced into rounds
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • ½ cup milk (optional, to thin sauce)
  • 1 medium onion, thinly sliced
  • 2 tablespoons chopped fresh parsley (optional for garnish)
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch casserole dish with oil or nonstick spray.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced kielbasa and cook until the edges are lightly browned, about 4 to 6 minutes. Use a slotted spoon to remove the kielbasa and set it aside.
  3. In the same skillet, add the sliced onion. Sauté for 4 to 6 minutes until softened and caramelized. Season lightly with salt and pepper. Remove from heat.
  4. In a medium bowl, whisk together the cream of mushroom soup, sour cream, and milk until smooth. Season with salt and pepper to taste.
  5. Arrange half of the frozen pierogies in the greased casserole dish. Scatter half of the browned kielbasa and half of the sautéed onions over the pierogies. Spoon half of the sauce mixture evenly on top. Sprinkle 1 cup of shredded cheddar cheese over this layer.
  6. Repeat the layering process with the remaining pierogies, sausage, onions, and sauce. Top with the last cup of shredded cheddar cheese.
  7. Cover the dish tightly with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 to 15 minutes until the cheese is melted, bubbly, and golden. For extra browning, broil for 1 to 2 minutes, watching closely.
  9. Allow the casserole to rest for 5 minutes before serving. Garnish with chopped fresh parsley and serve with optional sour cream.

Notes

This casserole can be refrigerated for 3 to 4 days or frozen for 2 to 3 months. Reheat covered in the oven or microwave.
