Description
Delicious and easy peanut butter cookies made with PB2 powder for a healthier twist.
Ingredients

- 2 cups all-purpose flour
- 1 tsp kosher salt
- ½ tsp baking soda
- 1 cup unsalted butter (room temperature)
- 1¼ cup brown sugar
- 1 egg (room temperature)
- 1 cup PB2 peanut butter powder
- ¾ cup water
- 2 tsp vanilla extract
- 5 oz Nutella
- ¼ cup peanuts (rough chop)
- ¼ tsp flaky sea salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine flour, kosher salt, and baking soda in a medium bowl and whisk until well mixed.
- Cream together the unsalted butter and brown sugar in a large bowl until light and fluffy.
- Add the egg, PB2 powder, water, and vanilla extract and mix until fully incorporated.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Drop portions of dough onto the prepared baking sheet, adding a dollop of Nutella on top of each before baking.
- Bake for about 10-12 minutes, until edges are lightly golden.
- Sprinkle flaky sea salt on top while still warm and cool on a wire rack.
Notes
Use room temperature ingredients for better mixing. Be sure to chill the dough to prevent excessive spreading.
