- 1 lb beef sausage
- 2 cups orzo pasta
- 4 tablespoons garlic butter
- 4 cups chicken broth
- 1 onion, diced
- 1 bell pepper, diced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the garlic butter over medium heat.
- Add the diced onion and bell pepper. Sauté until soft, about 2-3 minutes.
- Slice the beef sausage and add it to the pot. Cook until browned, approximately 5 minutes.
- Add the orzo pasta and stir to combine.
- Pour in the chicken broth, increasing the temperature to bring the mixture to a boil.
- Once boiling, reduce heat to low and let it simmer for 10-12 minutes, or until the orzo is cooked through.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
Notes
Avoid overcooking the orzo to prevent it from becoming mushy. This dish can be customized with additional vegetables or different types of sausage.
