Description

A simple and hearty one-pot dish combining ground beef, pasta, and vegetables for an easy weeknight meal.


Ingredients

  • 1 lb ground beef
  • 2 cups elbow pasta
  • 1 bell pepper, chopped
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the ground beef, breaking it up as it cooks.
  3. Stir in the onion, garlic, and bell pepper until softened.
  4. Mix in the diced tomatoes, beef broth, soy sauce, Worcestershire sauce, and elbow pasta.
  5. Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
  6. Adjust seasoning as needed, then serve hot.

Notes

Allow leftovers to cool before storing in an airtight container. Can be stored in the fridge for up to 3 days or frozen for 2-3 months.
