Instructions
- In a medium bowl, combine the peanut butter, powdered sugar, and vanilla extract until smooth.
- Melt the white chocolate chips in a microwave-safe bowl in 30-second increments, stirring each time, until fully melted.
- Mix the melted white chocolate with the peanut butter mixture until well combined.
- Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Refrigerate the truffles for about 30 minutes to firm up.
- Once firm, roll the truffles in festive sprinkles to coat them nicely.
- Store in the refrigerator until ready to serve or gift.
