Description

Delightful snowball cookies infused with mint and chocolate, soft and perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup powdered sugar, plus more for rolling
  • 1/2 teaspoon peppermint extract
  • 2 drops green gel food coloring (optional)
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips

Instructions

  1. Beat 1 cup softened unsalted butter with 3/4 cup powdered sugar until light and fluffy (about 2 minutes).
  2. Add 1/2 teaspoon peppermint extract and 2 drops green gel food coloring, mixing until evenly colored.
  3. Gradually add 2 1/4 cups all-purpose flour and 1/4 teaspoon salt. Mix until a dough forms.
  4. Fold in 3/4 cup mini chocolate chips until evenly distributed.
  5. Scoop dough into 1-tablespoon balls. You should get about 24 cookies.
  6. Bake at 375°F (190°C) for 10 minutes on a parchment-lined baking sheet.
  7. Cool for 5 minutes, then roll warm cookies in powdered sugar. Once fully cooled, roll again for extra coating.

Notes

For added sweetness, roll cookies in powdered sugar multiple times. Store in an airtight container for up to a week.
