Description

Delicious and convenient mini chicken quesadillas filled with flavorful chicken and plenty of gooey cheese, perfect for any time of the day.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 8 large (10-inch) flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • Sour cream (for serving, optional)
  • Salsa (for serving, optional)
  • Guacamole (for serving, optional)

Instructions

  1. Pat chicken breasts dry and whisk together olive oil, chili powder, cumin, garlic powder, salt, and pepper in a small bowl. Coat chicken with the spice mixture.
  2. Cook chicken by pan-searing in a skillet over medium-high heat for 6-8 minutes per side or baking at 400°F (200°C) for 20-25 minutes until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then dice into bite-sized pieces.
  3. Lay out tortillas and distribute about 1/4 cup of Monterey Jack cheese and cheddar cheese on one half of each tortilla. Sprinkle cilantro if desired.
  4. Divide diced chicken over the cheese layer and add another layer of cheese, about 2 tablespoons of each type. Fold the tortilla over to form a semi-circle and press down gently.
  5. Heat a large non-stick skillet or griddle over medium heat. Cook quesadillas 1-2 at a time for 3-5 minutes per side until golden brown and cheese is melted.
  6. Remove from skillet, let cool slightly, and cut into wedges. Serve with optional sour cream, salsa, and guacamole.

Notes

To store leftover quesadillas, allow them to cool completely, wrap in plastic wrap or aluminum foil, and refrigerate for up to 3 days. Reheat in a skillet for crispy texture.
