Ingredients

  • 1 (24 oz) container refrigerated mashed potatoes
  • 2 cups water
  • 1 packet onion soup mix
  • 5 celery stalks (roughly chopped)
  • 1/4 cup butter (preferably Kerrygold)
  • 2 packets brown gravy mix
  • 1 (26 oz) bag frozen meatballs
  • 2 cups baby carrots

Instructions

  1. Start by preparing your ingredients. Chop the celery into rough pieces.
  2. In a large pot, combine the water, onion soup mix, and butter. Stir well over medium heat until the butter melts completely.
  3. Add the chopped celery and baby carrots to the pot. Let them simmer for about 5 minutes until they start to soften.
  4. Add the frozen meatballs to the pot and stir gently to combine.
  5. Sprinkle the brown gravy mix over the mixture and stir well to dissolve the mix into the liquid.
  6. Allow the pot to come to a gentle boil, then reduce the heat to low and cover. Let everything simmer for about 30 minutes.
  7. Prepare the refrigerated mashed potatoes according to package instructions and keep warm.
  8. After 30 minutes, check the meatballs and veggies for doneness before serving.
