- 1 lb lean ground beef
- 1 red bell pepper, chopped
- ½ medium onion, finely chopped
- 3 tsp taco seasoning
- 1 tsp dried oregano
- 2 cloves garlic, minced
- ½ tsp salt (omit if using salted taco seasoning)
- 2 cups jarred tomato salsa
- 1 can black beans (19 oz / 590 ml), rinsed and drained
- 6 large tortillas
- 3 cups shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium-high heat, cook the ground beef, chopped red bell pepper, and finely chopped onion until the beef is browned and the vegetables are tender.
- Stir in the taco seasoning, dried oregano, minced garlic, and salt, cooking for an additional minute until fragrant.
- Add the jarred salsa and rinsed black beans to the skillet, mixing well and then removing from heat.
- Layer two large tortillas at the bottom of a 9×13-inch baking dish, cutting a tortilla in half if necessary.
- Spread a third of the beef mixture over the tortillas, then sprinkle a third of the shredded cheese on top.
- Repeat the layering process two more times with tortillas, beef mixture, and cheese.
- Bake in the preheated oven for 15–20 minutes, or until heated through and cheese is melted and bubbling.
- Let it cool slightly before slicing and serving.
