A quick and healthy recipe for flavorful lemon butter baked cod, perfect for busy weeknights.

- 4 cod fillets (6 oz each), or any firm white fish
- ¼ cup unsalted butter, melted
- 2 garlic cloves, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- Zest of 1 lemon
- 2 tbsp fresh lemon juice
- ¼ tsp red pepper flakes
- 1 tbsp fresh parsley, chopped
- 1 lemon, thinly sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a medium bowl, mix together the melted butter, minced garlic, garlic powder, onion powder, lemon zest, lemon juice, and red pepper flakes.
- Add the cod fillets to the bowl and gently toss to coat them in the lemon butter mixture.
- Place the coated fillets into a 9×13-inch baking dish. Pour any remaining sauce over the top. Arrange lemon slices around and on top of the fish.
- Bake for 10–15 minutes, or until the cod is opaque and flakes easily with a fork.
- Garnish with fresh chopped parsley and serve immediately.
Notes
Serve with rice, quinoa, roasted vegetables, salad, or potatoes for a complete meal.
