Description

A quick and healthy recipe for flavorful lemon butter baked cod, perfect for busy weeknights.


Ingredients

  • 4 cod fillets (6 oz each), or any firm white fish
  • ¼ cup unsalted butter, melted
  • 2 garlic cloves, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • ¼ tsp red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • 1 lemon, thinly sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, mix together the melted butter, minced garlic, garlic powder, onion powder, lemon zest, lemon juice, and red pepper flakes.
  3. Add the cod fillets to the bowl and gently toss to coat them in the lemon butter mixture.
  4. Place the coated fillets into a 9×13-inch baking dish. Pour any remaining sauce over the top. Arrange lemon slices around and on top of the fish.
  5. Bake for 10–15 minutes, or until the cod is opaque and flakes easily with a fork.
  6. Garnish with fresh chopped parsley and serve immediately.

Notes

Serve with rice, quinoa, roasted vegetables, salad, or potatoes for a complete meal.
