Description

This chicken and rice soup is comforting, easy to make, and perfect for family meals.

Ingredients

Scale
  • 2 chicken breasts, cooked and shredded
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cream or milk
  • Salt and pepper to taste
  • Fresh herbs (like parsley or thyme) for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the onions, carrots, celery, and garlic. Sauté until the vegetables are tender.
  2. Add the shredded chicken and chicken broth to the pot. Bring to a boil.
  3. Stir in the rice and reduce heat. Simmer for about 15-20 minutes, or until rice is cooked.
  4. Stir in the cream and season with salt and pepper.
  5. Serve hot, garnished with fresh herbs.

Notes

Avoid overcooking the rice and use fresh ingredients for the best taste. Adjust the consistency with more broth as needed.
