A hearty and delicious lasagna soup that combines classic flavors with high protein, perfect for family dinners or meal prep.
Ingredients

- 1 lb lean ground beef
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 28 oz crushed tomatoes
- 2 tbsp tomato paste
- 5 cups low-sodium beef broth
- 1 tbsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup part-skim ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup freshly grated parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot over medium heat, cook ground beef until browned, about 5–7 minutes. Make sure to drain any excess fat.
- Next, add the diced onion and sauté for about 3 minutes until softened.
- Stir in the minced garlic and cook for an additional minute.
- Now, stir in crushed tomatoes, tomato paste, and beef broth.
- Add Italian seasoning, red pepper flakes, salt, and black pepper. Bring to a boil.
- Once boiling, add broken lasagna noodles.
- Reduce heat to low and let simmer for 10–12 minutes.
- Turn off the heat and gently stir in the ricotta cheese until creamy.
- Serve in bowls topped with mozzarella, parmesan, and fresh parsley.
