Description

A hearty and delicious lasagna soup that combines classic flavors with high protein, perfect for family dinners or meal prep.


Ingredients

  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 5 cups low-sodium beef broth
  • 1 tbsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup part-skim ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, cook ground beef until browned, about 5–7 minutes. Make sure to drain any excess fat.
  2. Next, add the diced onion and sauté for about 3 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Now, stir in crushed tomatoes, tomato paste, and beef broth.
  5. Add Italian seasoning, red pepper flakes, salt, and black pepper. Bring to a boil.
  6. Once boiling, add broken lasagna noodles.
  7. Reduce heat to low and let simmer for 10–12 minutes.
  8. Turn off the heat and gently stir in the ricotta cheese until creamy.
  9. Serve in bowls topped with mozzarella, parmesan, and fresh parsley.
