- 2 pounds potatoes (red or Yukon gold)
- 4 slices bacon
- 1 large onion, chopped
- 1/3 cup apple cider vinegar
- 1/4 cup olive oil
- 1 tablespoon sugar
- Salt and pepper to taste
- Chopped fresh parsley (optional)
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Allow them to cool slightly.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and crumble.
- Cook the chopped onion in the same skillet over low heat until golden brown, about 10 minutes.
- Whisk together the apple cider vinegar, olive oil, sugar, salt, and pepper in a bowl to prepare the dressing.
- Combine the chopped potatoes, caramelized onions, crumbled bacon, and dressing in a large bowl.
- Gently mix until well coated. Adjust seasoning as needed. Serve warm or at room temperature.
Notes
Select waxy potatoes for best texture. Mix dressing into warm potatoes to enhance the flavors.
