- 2 large cucumbers
- 6 slices of cooked bacon, crumbled
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 tablespoon fresh chives, chopped
- Salt and pepper, to taste
- Optional: cherry tomatoes, quartered (for garnish)
Instructions
- Start by washing the cucumbers under cold water. Cut each cucumber in half lengthwise to create long boat shapes.
- Use a spoon to scoop out the seeds and some of the flesh from the center of each cucumber half.
- In a mixing bowl, combine the softened cream cheese, crumbled bacon, shredded cheddar cheese, and chopped chives. Mix well until all ingredients are fully blended.
- Season the mixture with salt and pepper to taste.
- Fill each cucumber boat generously with the bacon and cheese mixture.
- Garnish the tops with a few pieces of cherry tomato if desired.
- Place the filled cucumber boats on a serving platter and serve immediately or chill in the fridge for about 30 minutes before serving.
Notes
Choose firm cucumbers and avoid freezing for best texture. Fill just before serving to maintain crunch.
