Delicious cucumber boats filled with a creamy bacon and cheese mixture, perfect for parties or as a light snack.

- 2 large cucumbers
- 6 slices of cooked bacon, crumbled
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 tablespoon fresh chives, chopped
- Salt and pepper, to taste
- Optional: cherry tomatoes, quartered (for garnish)
Instructions
- Start by washing the cucumbers under cold water. Cut each cucumber in half lengthwise to create long boat shapes.
- Use a spoon to scoop out the seeds and some of the flesh from the center of each cucumber half.
- In a mixing bowl, combine the softened cream cheese, crumbled bacon, shredded cheddar cheese, and chopped chives. Mix well.
- Season the mixture with salt and pepper to taste.
- Fill each cucumber boat generously with the bacon and cheese mixture.
- If you like, garnish the tops with cherry tomatoes for added color.
- Place the filled cucumber boats on a serving platter and serve immediately or chill for about 30 minutes.
Notes
Best consumed fresh, but can be stored in an airtight container in the refrigerator for 1 to 2 days.
