Description

Delicious cucumber boats filled with a creamy bacon and cheese mixture, perfect for parties or as a light snack.


Ingredients

  • 2 large cucumbers
  • 6 slices of cooked bacon, crumbled
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper, to taste
  • Optional: cherry tomatoes, quartered (for garnish)

Instructions

  1. Start by washing the cucumbers under cold water. Cut each cucumber in half lengthwise to create long boat shapes.
  2. Use a spoon to scoop out the seeds and some of the flesh from the center of each cucumber half.
  3. In a mixing bowl, combine the softened cream cheese, crumbled bacon, shredded cheddar cheese, and chopped chives. Mix well.
  4. Season the mixture with salt and pepper to taste.
  5. Fill each cucumber boat generously with the bacon and cheese mixture.
  6. If you like, garnish the tops with cherry tomatoes for added color.
  7. Place the filled cucumber boats on a serving platter and serve immediately or chill for about 30 minutes.

Notes

Best consumed fresh, but can be stored in an airtight container in the refrigerator for 1 to 2 days.
