- 1 large head Fresh broccoli
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 1 medium Onion, chopped
- 4 cups Vegetable or chicken broth
- 1/2 cup Heavy cream
- Salt, to taste
- Black pepper, to taste
- Parmesan cheese, for garnish (optional)
Instructions
- Start by washing the broccoli under cold water, cutting the florets off the stem, and chopping them into bite-sized pieces.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until it’s translucent, around 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Toss in the chopped broccoli and stir everything well. Cook for about 3-4 minutes, letting the broccoli absorb the flavors of the onion and garlic.
- Add the vegetable or chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the broccoli is tender.
- Once the broccoli is cooked, use an immersion blender to puree the soup until it’s smooth. If using a regular blender, transfer the mixture in batches carefully.
- Return the soup to low heat, stir in the heavy cream, and season with salt and black pepper to taste.
- Ladle the soup into bowls and garnish with freshly grated Parmesan cheese if desired. Enjoy warm!
Notes
Make sure to choose fresh broccoli and avoid overcooking it to prevent mushiness. Add different ingredients for customization.
