Description

A rich and moist chocolate fudge cake that satisfies every chocoholic’s cravings with its decadent flavors and creamy ganache frosting.


Ingredients

  • 125g (4 oz) dark chocolate chips
  • 100g (7 tbsp) salted butter (or unsalted + ¼ tsp salt)
  • 1¼ cups white sugar (caster or superfine preferred)
  • ¼ cup vegetable or canola oil
  • 1 tsp vanilla extract
  • 2 eggs (room temperature)
  • ¼ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup boiling hot water
  • 1 tbsp instant coffee granules (optional)
  • 1 cup heavy or thickened cream (30%+ fat)
  • 250g (8 oz) dark chocolate chips

Instructions

  1. Preheat oven to 150°C (300°F), or 130°C (265°F) for fan-forced. Grease a 22cm (9-inch) springform pan and line the base with parchment paper.
  2. Place the butter and dark chocolate chips in a heatproof bowl. Microwave in 30-second intervals, stirring until smooth.
  3. Add vegetable oil, vanilla extract, and sugar to the melted chocolate mixture. Stir to combine, allowing to cool slightly.
  4. Mix in the eggs one by one, ensuring a smooth batter after each addition.
  5. Sift together the cocoa powder, baking powder, and flour (and coffee if using) into the bowl. Gently stir until smooth.
  6. Pour in the boiling water and stir until fully incorporated.
  7. Pour the batter into the prepared cake pan and bake for around 1 hour, checking at 50 minutes for doneness.
  8. Remove from oven and cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
  9. For the ganache frosting, place chocolate chips and cream in a heatproof bowl. Microwave until chocolate melts, stirring to combine.
  10. Refrigerate the ganache for 1-2 hours until thickened, then frost the cooled cake.

Notes

Ensure to use room temperature eggs for a smoother batter and do not overmix to avoid a tough cake.
