Description

A quick and flavorful stir-fry featuring tender beef and sweet caramelized onions, perfect for busy weeknights.


Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 2 large yellow onions, halved and sliced into thick wedges
  • 2 tablespoons neutral oil (like canola or peanut oil)
  • 2 teaspoons fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda (optional, for extra tenderness)
  • 1/2 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon dark soy sauce (optional, for color)
  • 1 teaspoon sugar
  • 1/4 cup water or beef broth
  • 1 teaspoon cornstarch (for thickening)

Instructions

  1. In a bowl, combine sliced beef with soy sauce, Shaoxing wine, cornstarch, baking soda (if using), and sesame oil. Mix well and let marinate for 20–30 minutes.
  2. In a small bowl, whisk together soy sauce, oyster sauce, dark soy sauce (if using), sugar, water or broth, and cornstarch. Set aside.
  3. Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add half the beef in a single layer and sear for 1–2 minutes. Flip and cook for another minute until browned. Remove and repeat with remaining beef.
  4. Add remaining oil to the pan and toss in sliced onions. Stir-fry for 2–3 minutes until softened and slightly golden. Add garlic and ginger and cook for another 30 seconds.
  5. Return beef to the pan with onions, pour in the sauce mixture, and toss everything together. Cook for 1–2 more minutes until sauce thickens and coats the beef and onions.
  6. Remove from heat, drizzle with sesame oil if desired, and serve hot over rice or noodles.

Notes

For an extra kick, add chili peppers to the stir-fry. Leftovers can be stored in an airtight container for up to 3 days in the fridge.
