Description
Enjoy quick and delicious chicken taquitos made with five simple ingredients, perfect for busy weeknights or casual gatherings.
Ingredients
Scale
- 2 cups cooked chicken (shredded or diced)
- 1 packet taco seasoning
- 8 oz whipped cream cheese
- 1 can green chilis
- 8 pieces flour or corn tortillas
- Salsa or pico de gallo (for dipping)
- Lettuce (for crunch)
- Sour cream
- Cheddar cheese (for extra cheesiness)
- Hot sauce (to taste)
Instructions
- Cook your chicken until fully done, using rotisserie chicken for convenience if desired. Shred or dice the chicken.
- In a large bowl, mix the cooked chicken with taco seasoning, whipped cream cheese, and green chilis until well combined.
- Take a tortilla and place about 2-3 tablespoons of the chicken mixture in the center.
- Roll the tortilla tightly around the filling, tucking in the sides as you roll. Repeat until all filling is used.
- Heat a skillet over medium heat and lightly grease it with cooking spray or oil.
- Place the rolled taquitos seam-side down in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
- For a healthier option, preheat your oven to 400°F (200°C), place the taquitos on a lined baking sheet, spray with a little oil, and bake for 15-20 minutes until golden and crispy.
- Remove the taquitos from the skillet or oven and let cool slightly. Serve with salsa or pico de gallo for dipping, garnished with lettuce, sour cream, and cheddar cheese.
Notes
Do not overfill the tortillas, and ensure they’re sealed well. Choose the right tortillas based on your preference for texture and flavor.
