Description

A delicious and quick recipe for chicken and avocado burritos with ranch dressing, perfect for busy weeknights.


Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 Ripe avocado, diced
  • 1/2 cup Ranch dressing
  • 4 Large flour tortillas
  • 1 cup Shredded cheese (cheddar or blend)
  • 1 cup Shredded lettuce
  • 1/2 cup Diced tomatoes
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Combine shredded chicken, diced avocado, and ranch dressing in a bowl. Mix well, and season with salt and pepper.
  2. Lay out the tortillas on a clean surface. Place some of the chicken and avocado mixture in the center of each tortilla.
  3. Top each tortilla with shredded cheese, lettuce, and diced tomatoes.
  4. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
  5. Heat a skillet over medium heat and add a little olive oil.
  6. Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side until golden and crispy.
