A delicious and quick recipe for chicken and avocado burritos with ranch dressing, perfect for busy weeknights.
Ingredients

- 2 cups Cooked chicken, shredded
- 1 Ripe avocado, diced
- 1/2 cup Ranch dressing
- 4 Large flour tortillas
- 1 cup Shredded cheese (cheddar or blend)
- 1 cup Shredded lettuce
- 1/2 cup Diced tomatoes
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Combine shredded chicken, diced avocado, and ranch dressing in a bowl. Mix well, and season with salt and pepper.
- Lay out the tortillas on a clean surface. Place some of the chicken and avocado mixture in the center of each tortilla.
- Top each tortilla with shredded cheese, lettuce, and diced tomatoes.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
- Heat a skillet over medium heat and add a little olive oil.
- Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side until golden and crispy.
