Description

A quick and flavorful one-pan meal featuring smoked sausage, creamy cheddar cheese, rice, and veggies, perfect for busy weeknights.


Ingredients

  • 1 lb smoked sausage (sliced)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 bell pepper (diced)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Heat a large skillet over medium heat and add the sliced smoked sausage. Cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the diced onions, minced garlic, and diced bell peppers. Sauté for 3-5 minutes until soft and fragrant.
  3. Add the uncooked rice, chicken broth, paprika, salt, and pepper. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat, cover, and let it simmer for 15 minutes.
  5. Stir in the browned sausage and shredded cheddar cheese until the cheese melts.
  6. Garnish with fresh parsley and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for 2-3 months.
