- 1 lb smoked sausage (sliced)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 bell pepper (diced)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- Heat a large skillet over medium heat and add the sliced smoked sausage. Cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the diced onions, minced garlic, and diced bell peppers. Sauté for 3-5 minutes until soft and fragrant.
- Add the uncooked rice, chicken broth, paprika, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat, cover, and let it simmer for 15 minutes.
- Stir in the browned sausage and shredded cheddar cheese until the cheese melts.
- Garnish with fresh parsley and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for 2-3 months.
