- 1 lb smoked sausage (sliced)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 bell pepper (diced)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- Heat a large skillet over medium heat and brown the sausage for 5-7 minutes. Remove and set aside.
- Add diced onion, minced garlic, and diced bell pepper to the skillet; sauté for 3-4 minutes until onion is translucent.
- Stir in long-grain white rice and chicken broth, adding paprika, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and let simmer for 15 minutes until rice absorbs liquid.
- Stir in browned sausage and shredded cheddar until cheese melts and everything is well mixed.
- Garnish with chopped parsley if desired and serve hot.
