- 1 tbsp Cajun seasoning
- 2 cups shredded cheese (cheddar or a blend)
- 1 cup heavy cream
- 2 tbsp olive oil

- 1 bell pepper, diced
- 1 onion, chopped
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, sprinkle with Cajun seasoning, and cook until browned and cooked through.
- Add garlic, bell pepper, and onion to the skillet, cooking until the vegetables are tender.
- Stir in the heavy cream and bring to a simmer. Add shredded cheese and mix until melted and smooth.
- Incorporate the cooked rotini into the sauce, and season with salt and pepper to taste.
- Serve warm, garnished with chopped green onions.
