Instructions

  1. Start by melting the white chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until fully melted and smooth.
  2. In another bowl, combine softened cream cheese and vanilla extract, mixing until smooth and creamy.
  3. Once cooled, pour the melted white chocolate into the cream cheese mixture and stir until well combined.
  4. Fold in the crushed candy canes gently to create an even distribution.
  5. Refrigerate the truffle mixture for about 30 minutes until firm enough to handle.
  6. Use a tablespoon or cookie scoop to portion out the mixture, rolling each portion into a ball.
  7. If too soft, return to the refrigerator for a bit longer.
  8. Roll each truffle in extra crushed candy canes to coat them well.
