- In another bowl, combine softened cream cheese and vanilla extract, mixing until smooth and creamy.
- Once cooled, pour the melted white chocolate into the cream cheese mixture and stir until well combined.
- Fold in the crushed candy canes gently to create an even distribution.
- Refrigerate the truffle mixture for about 30 minutes until firm enough to handle.
- Use a tablespoon or cookie scoop to portion out the mixture, rolling each portion into a ball.
- If too soft, return to the refrigerator for a bit longer.
- Roll each truffle in extra crushed candy canes to coat them well.
