Description

Ingredients

  • 1/2 cup chopped red onion

  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/3 cup dried cranberries or raisins
  • 1/2 cup Greek yogurt (or plain yogurt)
  • 1/4 cup mayonnaise (light or regular)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the broccoli: Cut into small florets, rinse thoroughly, and set aside.
  2. Dice the apples: Core and dice into bite-sized pieces, optionally leaving the skin on.
  3. Prepare the dressing: In a bowl, whisk together Greek yogurt, mayonnaise, lemon juice, and honey (if using). Season with salt and pepper to taste.
  4. Combine the salad ingredients: In a large bowl, mix the chopped broccoli, diced apples, shredded carrots, red onion, pecans (if using), and dried cranberries.
  5. Toss and coat: Pour the dressing over the salad mixture and toss gently to combine.
