- 2 medium apples, cored and diced (Gala or Honeycrisp recommended)
- 1/2 cup chopped red onion
- 1/2 cup shredded carrots
- 1/2 cup chopped pecans or walnuts (optional)
- 1/3 cup dried cranberries or raisins
- 1/2 cup Greek yogurt (or plain yogurt)
- 1/4 cup mayonnaise (light or regular)
- 1 tablespoon lemon juice
- 1 tablespoon honey (optional)
- Salt and pepper to taste
Instructions
- Prepare the broccoli: Cut into small florets, rinse thoroughly, and set aside.
- Dice the apples: Core and dice into bite-sized pieces, optionally leaving the skin on.
- Prepare the dressing: In a bowl, whisk together Greek yogurt, mayonnaise, lemon juice, and honey (if using). Season with salt and pepper to taste.
- Combine the salad ingredients: In a large bowl, mix the chopped broccoli, diced apples, shredded carrots, red onion, pecans (if using), and dried cranberries.
- Toss and coat: Pour the dressing over the salad mixture and toss gently to combine.
- Chill and serve: Refrigerate for at least 30 minutes before serving to meld flavors.
