- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons black pepper
- 3 tablespoons soy sauce (or gluten-free soy sauce)
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt to taste
Instructions
- In a bowl, toss the sliced chicken with cornstarch and salt.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the chicken and stir-fry until cooked through.
- Add minced garlic and ginger, and stir for 30 seconds.
- Add mixed vegetables and stir-fry until crisp-tender.
- Pour in soy sauce and sprinkle black pepper over the chicken and vegetables.
- Stir well to combine and cook for another 2-3 minutes.
- Serve hot over rice or noodles.
