Description

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons black pepper
  • 3 tablespoons soy sauce (or gluten-free soy sauce)
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt to taste

Instructions

  1. In a bowl, toss the sliced chicken with cornstarch and salt.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the chicken and stir-fry until cooked through.
  4. Add minced garlic and ginger, and stir for 30 seconds.
  5. Add mixed vegetables and stir-fry until crisp-tender.
  6. Pour in soy sauce and sprinkle black pepper over the chicken and vegetables.
  7. Stir well to combine and cook for another 2-3 minutes.
  8. Serve hot over rice or noodles.
